Recipe: Coconut Joys

These are so easy to make and are a great addition to a Christmas cookie tray.

INGREDIENTS:

  • 1/2 cup (1 stick) butter or
  • margarine
  • 2 cups powdered sugar
  • 3 cups coconut
  • 2 squares semisweet or unsweetened chocolate, melted

DIRECTIONS:

  • Melt butter, add powdered sugar and coconut. Mix well.
  • Shape by teaspoonful into balls. Make indent in center of each and fill with melted chocolate.
  • Chill until firm. Store in refrigerator.

Yield: 3 dozen cookies.
