Recipe: Ham and Cheddar Chowder

Ham and Cheddar ChowderINGREDIENTS:
2 cups water
2 cups diced potatoes
1/2 cup diced carrots
1/2 cup diced celery
1/4 cup chopped onion
1 tsp. salt
1/4 tsp. pepper
2 Tbsp. butter

WHITE SAUCE:
1/4 cup butter
1/4 cup flour
2+ cups milk
2 cups cheddar cheese, grated
1 cup cubed ham

DIRECTIONS: Combine water and potatoes; bring to a boil and cook for 10-12 minutes or until potatoes are tender; drain. In separate saucepan, sauté carrots, celery, onion, salt, pepper and onion until tender. Add to drained potatoes. In small saucepan, make the white sauce by melting the butter. Add flour, salt and pepper and stir until smooth, about one minute. Slowly add 2 cups of the milk; cook until thickened. Add grated cheese to white sauce; stir until melted.

Add white sauce and ham to potatoes and vegetables. Heat through and add more milk until desired con- sistency.

YIELD: 6 servings.
